Brewing Guide
Jasmine green tea is the quiet, fragrant cup of an unhurried afternoon. In Traditional Chinese Medicine the green-tea base is read as gently cooling and clearing, while the jasmine scent is associated with easing tension and lifting the mood, which is why a fragrant jasmine is so often reached for to slow down and settle the mind.
The young green-tea base carries the catechins and L-theanine of a high-grade green tea, the amino acid behind green tea's calm-alert character, and the aroma itself does real work: the scent of jasmine has been studied for its calming, mood-lifting effect. None of this is a medical claim. It does explain why a good jasmine tea feels as much like aromatherapy as a drink.

The Signature
Huatan Signature is our second grade, the everyday jasmine. The base is a young green tea grown in Taiwan, picked small and slim, then scented with fresh jasmine petals multiple times, well beyond the single scenting of an ordinary jasmine. What reaches the cup is a sweet floral aroma laid over a clean, fresh green-tea body.
The cup pours a light yellowish-green, bright and clear. The taste is sweet and refreshing, the jasmine carried on the fresh green base rather than sitting on top of it, and the finish is delicately sweet and lingering. It is the fragrant cup a household keeps open and pours through the week.
The Craft
Jasmine tea marries two harvests: the green tea picked in spring, and the jasmine flowers gathered in high summer and held until evening, when the buds open and are at their most fragrant. The tea and the blossoms are layered together so the dry leaf drinks in the scent overnight, and the spent flowers are sifted out the next morning so only the fragrance stays, never the petals.
An everyday jasmine is scented once. Huatan jasmine is scented many times over, fresh blossoms each round, the slim green leaf taking on more aroma with every pass. It is slow and costly work, which is why a true multi-scented jasmine is uncommon.
The leaf itself stays loose and whole rather than rolled, small slim green leaves that open quickly and pour a light, bright cup. Huatan Signature is the second-grade leaf of that craft, from the same Taiwan source as our Reserve and Select grades.


Flavor
Brew it cool, the way a fine green tea wants: water at 70 to 80°C, never boiling, with about three grams of leaf to 150ml of water, steeped three to five minutes. The hotter the water or the more leaf you use, the shorter the steep should be. A covered glass or ceramic cup lets you watch the slim leaves open.
The aroma is a sweet floral jasmine over clean green-tea undertones. The taste is sweet and refreshing, with no bitterness when brewed cool, and the finish is delicately sweet, lingering softly. The light yellowish-green cup stays bright and clean across three or more infusions.
